For 100–500 pax events, simplify your packaging into the three big decisions below so your field team can work without drama.
Don't put everything in one type of container. Use large trays for bulk dishes guests serve themselves at the buffet table — rice, stir-fries, fried snacks — and individual lunch boxes for components that spill easily or for VIP guests and committee members. For set meals with lots of side dishes, a compartment lunch box keeps every component in its place.
A buffet can run for hours, so don't bring all the food out at once. Keep backup stock tightly covered in the back area and refill the table little by little. Separate dry components from those with sauce or broth so textures don't go soggy quickly, and use packaging lids to hold in steam while the food waits its turn.
Group packaging by menu item and label it clearly so the team can easily count it and unload it in serving order. Choose containers that stack neatly with lids that close securely. For dishes with sauce or broth, fill to a maximum of 80–90 percent so there's a safe margin when the vehicle jolts, and put a base layer between stacked tiers.
